Maple-Glazed Salmon with Sweet Potatoes and Broccoli #paleo #glutenfree

With only 5 fixings, this Sheet Pan Dinner is a simple method to get the chance to get a solid feast on the table FAST! By heating the Maple-Glazed Salmon with Sweet Potatoes and Broccoli all on one plate, there are not very many dishes to wash toward the finish of this family-accommodating supper!

A "Sheet Pan Dinner" is just a feast that cooks on one plate (or heating sheet). You don't need to juggle meat on the stove, sides in the broiler, and plate of mixed greens in a bowl! Rather, toss everything onto a solitary dish and you have your protein, starch and veggies prepared to go.

Subsequent to brushing the salmon with a basic maple-dijon coat, the final product is a fresh caramelized outside and a delicate, sodden inside. The key is giving the potatoes and broccoli a head-begin in the broiler before adding the fish to the skillet. That way your veggies have room schedule-wise to cook until they're delicate, without drying out the salmon.

With just 5 ingredients, this Sheet Pan Dinner with Maple Glazed Salmon, Sweet Potatoes and Broccoli is an easy way to serve a healthy meal!

Ingredients

  • 2 sweet potatoes peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil plus more for drizzling
  • 12 ounces broccoli florets
  • 4 salmon fillets about 4-6 ounces each
  • ¼ cup maple syrup
  • 2 tablespoons Dijon mustard
  • Salt and pepper

Instructions

  1. Heat oven to 425 degrees F.
  2. Line a rimmed baking sheet with aluminum foil and spray with cooking spray.
  3. Spread sweet potatoes and broccoli onto prepared pan and drizzle with 2 tablespoons of olive oil, or more as needed to fully coat the vegetables. Toss the vegetables in the oil and season with salt and pepper, to taste.
  4. Roast for 10-15 minutes, or until potatoes are just about fork-tender.
  5. While potatoes and broccoli are roasting, prepare glaze for salmon. In a small bowl, whisk together maple syrup, mustard, ¼ teaspoon salt, and ¼ teaspoon pepper.
  6. Remove vegetables from oven and turn oven setting to BROIL on “high.” Spread broccoli and potatoes to outer edges of sheet pan to make room in the center for the fish.
  7. Place salmon in center of tray, leaving at least ½-inch of space in between each fillet so that they cook evenly. Brush glaze on top of each piece of salmon.
  8. Broil for 7-10 minutes, or until salmon flakes easily with a fork and top is browned and crispy. Potatoes and broccoli should be roasted and tender as well. The total broiling time will depend on the size and thickness of your fish.
